The cheesy leek and potato pie came about when I wanted to make something a bit different for realcomfort food. It is a bit of a take on Homity pie I guess but cheesier! So this is how I make cheesy leek and potato pie, if you enjoy it please do let me know.

This is a really cheap recipe to make and is a great way to use any reduced leeks you have bought for a filling meal that even kids love!

I try to ensure all of therecipesI make are accessible to everyone. By this, I mean that they do not use obscure hard to find ingredients.

I also believe thatrecipesshould use as few ingredients as possible and avoid expensive ingredients. We would all much rather spend money on holidays than expensive ingredients wouldn’t we?

Buying herbs andspicesin bulk is something I really recommend. It can save a lot of money in the long term but also mean you never run out! I find putting them onAmazonsubscribe and save helps too!

Shopping around to see which shops have offers on your usual products can make a big difference to your weekly shopping bill.

Additionally don’t forget to check out the yellow sticker reductions and freeze what you can.

Frozen vegetables are nutritionally just as good as fresh usually so do keep an eye out for those too to save money. Frozen leeks work really well in this cheesy leek and potato pie and are often cheaper too!

Description

A hearty cheesy leek and potato pie without pastry

Ingredients

Scale

Low Calorie Cooking Spray

3 cloves Garlic (crushed)

4 large Baking Potatoes peeled and cut into chunks

3 large Leeks (thinly sliced)

2 large Red onion (diced)

280 grams Eatlean Protein Cheese (Grated)

250 grams Fat free cottage cheese with chives

2 Eggs

Black Pepper and Seasalt as needed to season.

Instructions

Preheat oven to 200°c

Place potatoes and boiling water in a pan and bring to a boil. Cook for around 20 minutes until soft enough to mash

Drain potatoes and mash then set aside.

Using a large frying pan and low calorie cooking spray fry the leeks, garlic and onions until soft.

Mix the leek mixture into the potatoes and set aside.

Beat the eggs in a separate bowl

Add the eggs, cottage cheese and grated cheese into the mashed potatoes and leek mixture and mix thoroughly. Season well and pour into a large casserole dish.

Bake in the oven for 30-40 minutes or until golden on top.
