This vegetarian Feta Jalapeno Tomato Flatbread is fantastic for a spur of the moment meal or as an easy appetizer to share with friends. Thank you to Dietz & Watson for helping me share this recipe with you.
During my bridal shower (many) years ago, the host asked me to share a fond remembrance of each guest before I opened their gift. I dug back into my memory banks, sharing both fond memories and funny stories. As I opened the last gift, my aunt turned to me and said, "Not that I was counting or anything, but do you realize that more than half of your stories involved food?"
She was right, of course. At first I took it as a logical sign of my obsession with great food. But the more I thought about it, I realized how many of my dearest memories of family and friends encircle the act of breaking bread together.
Have you ever had that feeling after a long evening of eating, drinking, talking and laughing with a kindred group of family or friends? That feeling where an all-encompassing feeling of warmth and well-being surrounds you and your guests because you've set aside petty annoyances of your day, turned off the electronics and really connected with each other?
A couple of weeks ago, I was given the opportunity to share an amazing meal with some local food bloggers, some old friends and some new, cooked by the inspiring Chef Giselle Wellman. You may have witnessed Chef Wellman's creativity on Top Chef, and I felt honored to taste her food and be swept up in her enthusiasm, live and in person. The evening was hosted by Dietz & Watson as part of their campaign to #choosethetable, and I'm so excited to give some of you the chance to enter your own chef's table experience (see below for details).
What does #choosethetable mean? It's everything I've been taught to do by my parents, which I do my best to pass on to my boys and share with friends. It's gathering together, whether for a formal meal or a spur of the moment snacking session, taking the time to re-connect at the end of the day or week and sharing great food together.
As much as I try my best to serve up healthy meals to my family, my favorite way of eating with them is pulling out sliced meats, cheeses, crackers, vegetables, olives and anything else that may be hanging around in our kitchen for a throw-together mish mash kind of meal. This easy, 15-minute feta jalapeno tomato flatbread fits right into a quick, spontaneous meal, and stars tangy goat cheese, summer sweet tomatoes and a fiery jalapeno spread (so good!) Salty, savory and just right with a glass of chilled white wine. Ingredients
- 2 whole wheat flatbreads
- 2 teaspoons olive oil
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- 2 tomatoes sliced
- 4 teaspoon or more Dietz & Watson Jalapeno Spread
- 2 ounces Dietz & Watson Originals Feta Cheese crumbled
- 2 teaspoons minced cilantro
Instructions
Preheat the oven to 400 degrees F.
Brush each flatbread with 1 teaspoon olive oil. Sprinkle each with half of the garlic powder and salt.
Top the flatbreads with tomatoes, jalapeno spread and feta cheese.
Bake until cheese is melted and the flatbread is light golden brown, 8 to 10 minutes.
Cut each flatbread into 4 pieces. Serve.
