Start off by boiling your noodles of choice. My personal favorite is ramen noodles (with the flavor packet thrown away)! Once the noodles are cooked, drain them in a colander, and rinse. Set the noodles aside until later.

Heat a large nonstick skillet. Once hot, add the oil and swirl to coat the bottom of the pan. Once the oil is hot, add the garlic. Saute until the garlic is aromatic and golden.

  • 1/2 pound Asian style noodle (udon, ramen, rice noodles or lo mein; 8 ounces)
  • 1/3 cup low-sodium soy sauce (or Tamari)
  • 3 Tablespoons packed light brown sugar
  • 1/2 Tablespoon cornstarch
  • 1/4 teaspoon ground ginger
  • 2 Tablespoons vegetable oil
  • 2 medium cloves garlic (minced)
  • 1 green onion (diced, optional, for garnish)
  • 1/2 teaspoon sesame seeds (optional, for garnish)

Instructions

  1. Bring a large pot of water to a boil. Add the noodles and cook according to the package instructions. Once the noodles are done, drain in a colander and rinse. Set aside.
  2. To a small mixing bowl, add the soy sauce, brown sugar, cornstarch, and ginger. Whisk to combine, then set aside.
  3. Heat a large nonstick skillet over medium-heat. Add the oil and swirl to coat the bottom of the pan. Once the oil is hot, add in the minced garlic and saute for 1-2 minutes while stirring constantly to prevent burning (until the garlic is aromatic and has just started to turn golden).
  4. Before adding the sauce to the pan, give it another quick whisk to loosen up the sugar that may have settled at the bottom of the bowl. Pour the sauce into the pan while whisking constantly. Simmer the teriyaki sauce for about 3-5 minutes while whisking occasionally, or until the sauce has thickened.
  5. Once the sauce is thick and bubbly, add the cooked noodles to the pan. Use tongs to gently toss the noodles through the sauce until they are fully coated.
  6. Garnish with diced green onions and sesame seeds. Serve immediately.
